Cheesy Artichoke Dip

1 (14 oz.) can artichoke hearts, drained, chopped                                                
                        

1 cup grated parmesan cheese

1 cup mayo

Combine all ingredients an mix well.  Pour into sprayed baking dish and bake at 350 degrees for 20-25 minutes.  Serve with crackers.

This is a quick, easy dip to make for those of us who are on a budget.  Make sure you get the artichoke hearts that are in water and not the seasoned ones.  I never liked artichoke hearts but this changed my mind.  I also use Ritz crackers for serving but any cracker will work.  Visit my website to see more recipes and to learn more about my book Stir, Laugh, Repeat.  www.marthaskitchenkorner.com

I'm originally from Atlanta, GA. I have written a cookbook that was released 6/10/08. My book consists of simple recipes with ingredient changes and/or additions to fit the cook's taste.
